If it offended/bothered someone, I would try to accommodate them with an appropriate alternative. I wish people "Merry Christmas" in recognition of its legal status as well as its personal and religious significance to me. Those who prefer the generic "Happy Holidays" are equally free to issue whatever greeting they wish or none at all. In my area there are diverse ethnic groups that observe a variety of Old Country traditions which include special foods, music and religious observances.
